Power-Packed Wellness Muffins
1 cup whole spelt flour
1 cup whole oat flour (grind rol
led oats in a coffee grinder)
1/2 cup rolled oats
2 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
3 ripe bananas, mashed (potato masher or fork work well)
3/4 cup plant-based milk (rice, soy, almond etc)
1/2 cup apple sauce
1/3 cup maple syrup or agave syrup
1 TBSP ground chia seeds (grind in a coffee grinder)
1/4 cup hemp seeds (also known as hemp hearts)
1/2 cup raisins
1 tsp vanilla
Preheat oven to 375 degrees.
Mix the dry ingredients together in a medium sized bowl – spelt flour, oat flour, rolled oats, cinnamon, baking powder, baking soda and salt and set aside.
Mix the ground chia and the plant-based milk together in a small bowl and set aside.
In a large bowl mix the mashed bananas, apple sauce, maple syrup, hemp seeds, raisins and vanilla and then add the plant-milk and chia seed mixture. When well combined add the contents of the dry ingredient bowl and stir until just mixed.
Use muffin tin papers or grease with a tiny amount of vegetable oil. Spoon batter into muffin tin and bake for 15 minutes.
Makes 12 muffins
